This is a healthy dish that's great for breakfast when family or friends come to visit. It fills the house with a great smell, and feeds roughly 8 people. I bake it year round and have enjoyed it for many years! Mix the ingredients below and bake at 350°F for 35-40 minutes.
Baked Oatmeal Ingredients
3 Cups Oats
1 Cup Packed Brown Sugar
2 tsp. Baking Powder
1 tsp. Salt
1/2 tsp. Cinnamon
2 Eggs, Beaten
1 Cup Milk
1 Stick (1/2 Cup) Melted Butter
1-1/2 Cup Mixed Fruit
Start by using a large mixing bowl. Add the oats, brown sugar, baking powder, salt, and cinnamon. Now beat two eggs in a small mixing bowl and add them in. Assuming your mixed fruit is frozen, thaw in a microwave using the same small mixing bowl and add them in. Do the same to melt the butter. Now lastly, add in the cup of milk. Mix well and preheat the oven to 350°F.
Take a 10in x 10in baking dish and coat it with a small amount of butter. Now add all ingredients from your large mixing bowl and spread evenly. Bake at 350°F for 35-40 minutes. Enjoy!
A Brief History
It is not currently known where oats originated but they are suspected to come from Asia Minor (modern day Turkey), due to the high number of sub-species there. The oldest archeological finding of oats is in Egypt, dating to 2000 BC. But these oats were probably weeds and not a cultivated food source. The oldest cultivated oats are found in caves in Switzerland, dating from the Bronze Age (2300-1177 BC).
Oats first came to America when European settlers sewed them in 1602 on Elizabeth Island, off the coast of Massachusetts.
